After a long morning of coaching for my Real Estate business, I treated home inspector Jeff Marshall to a new restaurant for both of us – Miguel’s Mexican Grill on 8th Street in Colorado Springs. It was everything we both hoped for from a sit-down Mexican restaurant. Chips and salsa were served quickly, as the restaurant filled up for the lunchtime rush.
I’m a huge fan of melty-cheesy-ooey-gooey, so I was ready to throw down some calories when I walked in the door. Three enchiladas later, I did my best to finish Miguel’s enchilada trio. Eyes bigger than my stomach, I added refried beans and rice to my dish. Again, zero regrets.
